2、;5.西北农林科技大学机械与电子工程学院,杨凌712100)摘要:拉曼光谱是一种基于拉曼散射效应的光谱学分析技术,具有测试时间短、灵敏度高、操作简单、无需预处理等优点,现已广泛应用于材料、生物、地质、化工和环保等领域。拉曼光谱作为一种鉴定物质结构的无损检测方式,在保证食品质量安全方面起到了积极的作用。本文概述了拉曼光谱的检测原理、拉曼光谱仪的基本构成以及拉曼光谱技术的分类,重点介绍了拉曼光谱在食品无损检测方面的研究进展,并对拉曼光谱在检测中存在的问题和未来的发展进行了讨论。关键词:拉曼光谱;无损检测;
