3、98%,热值为24.52J/Kg,鲳鱼去内脏的水分含量为75.52%,灰分含量为8.79%,热值为22.07J/Kg;蛇鲻鱼整条的水分含量为78.76%,灰分含量为11.66%,热值为19.80J/Kg,蛇鲻鱼去内脏的水分含量为75.63%,灰分含量为12.42%,热值为20.24J/Kg。蛇鲻鱼的水分含量与热值之间呈显著负相关,且相关关系的程度为热值大于灰分;小黄鱼灰分含量与水分含量之间具有一定的相关递增趋势;鲳鱼则与蛇鲻鱼相反,水分含量与热值之间呈显相关递增趋势,灰分含量与水分含量之间呈相关递增趋势。另外,热值的大小不仅与鱼体本身生物学特性有关,也受环境因子
