2、面质量,提出了一种解决以上问题的全自动发面机的设计。方法:该设计由搅拌系统、温控系统、发酵容器、防溢出检测系统和控制器组成,搅拌系统有间歇和连续两种工作方式,温控系统实现发酵室的恒温控制、发酵容器带有聚四氟乙烯不粘涂层,防溢出检测系统使用两个电极构成电阻式传感器,根据面团接触和不接触电极时电极间电阻值的不同进行防溢出检测,控制器采用单片机实现发面机的全自动控制。结果:所设计的发面机可以定时启动和全自动操作,省时省力,而且能控制发酵温度和防止发面溢出,还可以按面团按触防溢出检测传感器的次数控制发酵,保证发面质量
3、。结论:实验证明,所设计的发面机省时省力,发面质量好,成本低,适于推广。Abstract:Purpose:Traditionaldoughmakingmethodsarecomplexandtimeconsuming.Theycannotguaranteeconstantgoodleaveningquality,aswell.Anewdesignofafullyautomatickneadingandleaveningmachinehasbeenproposed.Methods:Thedesignconsis
4、tsoffiveparts:themixingsystem,thetemperatureregulatingsystem,thecontainer,theoverflowdetectingsystem,andthecontroller.Themixingsystemhastwoworkingmodes,theintermittentmodeandthecontinuousmode.Thetemperatureregulatingsystemcontrolsthetemperatureoftheleavenin
5、groom.ThecontainerhasTefloncoating.Theoverflowdetectingsystemusesaresistancedetectorconsistingoftwoelectrodes.Overflowdetectionisaccomplishedbydistinguishingtheresistancebetweenthetwoelectrodes.Thecontrollerusesasinglechipmicrocomputertorealizethefullautoma
6、ticcontrolofthemachine.Results:Themachinecanstartupatapresettime,andfullautomaticallyoperates.Italsocontrolsthetemperatureoftheleaveningroom,andcanavoiddoughoverflow.Insteadofleaveningcontrolbytime,itcancontroltheleaveningqualitybycontrollingthetimesofthedo
