1、西安建筑科技大学硕士学位论文西凤酒制曲中心建筑空间设计与研究专业：建筑学硕士生：张子豪指导教师：马晓东高级建筑师摘要近几十年来，随着生活水平的不断提高以及物质生活极大的丰富，白酒行业需求量增长速度迅猛。而这对于白酒制曲建筑而言，在建筑形式与规模上提出了新的要求，进入了深化阶段。本文通过对西凤酒制曲中心建筑空间的设计与研究，探讨了制曲建筑高层化的可行性与适应性。在传统白酒酿造的制曲环节中，其建筑主要为单层厂房，建筑功能的排布依据制曲的流程展开。但随着社会的发展，地皮的稀缺与成本的不断提高，以及对产量和效率进一步的需求，使得按照传统的建筑形式建造已越加困难。都让白酒制曲车间从单层向多层的

2、转变趋势越加明显。在这样的情况下，如何通过有效的设计，使得采用平房制曲的传统建筑形式向高层的转变成为了此次研究的重点。高层制曲建筑的设计，其范畴属于工业建筑设计，所以在整个设计过程当中必须注意到制曲的整个生产过程，在尊重传统生产工艺的情况下，做到建筑形式的创新与功能需求的统一，在不影响制曲质量的情况下使得建筑形式与生产流程有机的相结合，从而实现制曲建筑从平面化向立体化的转变。关键词：制曲工艺、制曲建筑、建筑空间设计I西安建筑科技大学硕士学位论文DesignAndResearchOfXifengLiquorYeastMakingCenterSpecialty:ArchitectureD
