2、leissuitableforuseinasecondorsubsequentcourseinamicrobiologycurriculum,orasaprimaryfoodmicrobiologycourseinafoodscienceorfoodtechnologycurriculum.Althoughorganicchemistryisadesirableprerequisite,itisnotnecessaryforonetogetagoodgraspofmostofthetopicscovered.Whenusedasamicrob

3、iologytext,thefollowingsequencemaybeused.Asynopsisofthein-formationinChapter1willprovidestudentswithasenseofthehistoricaldevelopmentsthathaveshapedthisdisciplineandhowitcontinuestoevolve.Memorizationofthemanydatesandeventsisnotrecommendedsincemuchofthisinformationispresente

4、dagainintherespectivechapters.ThematerialinChapter2includesasynopsisofmodernmethodscurrentlyusedtoclassifybacteria,taxonomicschemesforyeastsandmolds,andbriefinformationonthegeneraofbacteriaandfungiencounteredinfoods.Thismaterialmaybecombinedwiththeintrinsicandextrinsicparam

5、etersofgrowthinChapter3astheyexistinfoodproductsandastheyaffectthecommonfoodborneorganisms.Chapters4to9dealwithspecificfoodproducts,andtheymaybecoveredtotheextentdesiredwithappropriatereviewsoftherelevanttopicsinChapter3.Chapters10to12covermethodsforculturingandidentifyingfo
