3、ing—VerlagBerlinHeidelberg2010AbstractGiantredseacucumber(Parastichopuscalifornicus)isanunder—utilizedspeciesduetoitshightendencytoautolysis,Iheaimofthisstudywastoevaluatethefunctionalpropertiesofcollagenhydrolysatesfrointhisspecies.Thedegreeofhydrolysis(DH),aminoacidcomposition,SDS—PAGE,emu

4、lsionactivityindex(EAI),emulsionstabilityindex(ES1),foamexpansion(FE).andfoamstability(FS)ofhydrolysateswereinvestigated.TheefectsofpHontheEAI,ESIFEandFSofhydrolysateswerea1soinves.tigated.Theresultslndicatedthatthe∥andalchainsofthecollagenwcrcefectivelyhydrolyzedbytrypsinat50℃withanEn.zyme/

5、Substrate(E/S)rationof1:20(w:w).TheDHofcollagenwasupto17,3%after3hhydrolysiswithtrypsinThehydrolysateshadamolecularweightdistributionof1.1—17kDa,andwereabundantinglycine(Gly),proline(Pro),glutamicacid(Glu).alanine(Ala)andhydroxyproline(Hyp)residues.Thehydrolysateswerefractionatedintothreefra

6、ctions(<3kDa3-10kDa,and>10kDa1andthefractionof3-10kDaexhibitedahigherEA1valuethanthefractionof>10kDa(P<0.05).Thefractionof>10kDahadhigherFEandFSvaluesthanotherfractions(户<0.05).ThepHhadanimportantefectoiltheEAI,ESI,FEandFS.AllthefractionsshowedundesirableemulsionandformingpropertiesatpH4.0.U
